Great soup for a fall weather
We made a butternut squash soup today. It tasted great with a nice nutrition value.
First you cut a thin slices of squash, carrots, onions and cellery.
You put a salt and freshly grounded pepper and little bit of olive oil on it.
Grill all the veggies until it’s all soft.
Put little bit of olive oil and a pint of chili peppers at the bottom of the pot.
Dice a grilled veggies and put it in the pot.
Cook it for couple of minutes. Fill half of the pot with water and use 1 dice of vegetable bujon.
Cook another 5-10 minutes. Use a hand blander for a nice creamy texture before you are ready to serve it.
It’s a great tasting soup with a nice smoky flavor. Enjoy!
